After a lot of deliberation of dietary needs and wants I've decided to try Veganism for a week, a lot of my diet already revolves around fresh fruit, vegetables and meat substitutes so I thought why not take it a step further, another reason is that I suffer from terrible IBS and cutting dairy could be very beneficial.
I've done a lot of research into the diet and the needs of a vegan and I feel its a lifestyle I could easily adapt too.
I already own a lot of the recommended basics such as; Almond milk, Lentils, Quinoa, Chick peas/selection of beans, Vegetables, Greens and fruit. I need to buy some more tofu and invest in some Falafel and other dairy alternatives like soy yoghurt as I love my Greek yoghurt and it will be sorely missed!
This morning I made myself vegan pancakes topped with cinnamon, apples, raisins and dried apricots and it was one of the best breakfasts I've had in ages! So quick and easy to make!
I feel that Veganism will help me become more organised in my food intake and I can learn to prepare my meals in advance which means my life will hopefully become less hectic.
Here is the recipe for my pancakes this morning:
VEGAN PANCAKES
- 2 tbsps of Baking powder
- Pinch of salt
- 1 tsp of sugar
- 1 cup of flour (I used wholemeal)
- 1 tsp of oil
- 1 cup of almond milk
- 1 tsp of cinnamon
Mix together, add a dollop to a heated frying pan and it should take about 30 seconds, flip it over and plate up! I added sliced apples, raisins and apricots to taste. Yum.
I will let you know my progress during the week with my ups and downs and hopefully lots of new cafes to try out.
